Instructions
Preheat oven to 350 °F degrees and prep baking sheet with parchment paper.
Brown butter (1 cup) in a pan on medium heat and then transfer to a bowl to chill in the fridge for at least 15 minutes.
In a separate bowl, whisk together flour (2 ¼ cups), baking soda (¾ tsp), and salt (½ tsp).
Remove butter from the fridge and mix in the brown sugar (1 cup), white sugar (¼ cup), egg (1), egg white (1), vanilla extract (2 tsp), and cocoa powder (½ cup) until well combined.
Sift in dry ingredients and mix until homogeneous.
Pour sugar (½ cup) into a separate bowl. Use an ice cream scoop to form dough balls of the same size and roll each one in the sugar.
Place each ball on the baking tray and bake for 12-15 minutes.
Start checking at 12 minutes, but if your dough balls are bigger it will take longer.
Let the cookies cool for 10 minutes before transferring to a plate. Enjoy!
