GREAT HEAVENS these were insanely chewy. I dunked them in iced coffee I made at home, so what I’m saying is cafes are virtually useless to me now. After much cookie testing I have finally accepted that lowering the sugar content ruins the texture and prevents spreading. If you make this I beg you to keep the same measurements you won’t regret it

Instructions
Preheat oven to 350 °F and line two greased baking sheets with parchment paper.
In a bowl, whisk together the olive oil (½ cup), brown sugar (¾ cup), granulated sugar (¼ cup), vanilla (2 tsp), and egg (1 large) until smooth.
Add cornstarch (1 Tbsp), baking powder (½ tsp), baking soda (½ tsp), salt (¾ tsp), and flour (1 ¼ cups). Stir with a rubber spatula until combined.
Scoop dough, roll in sesame seeds, and place on the baking sheets, leaving 2 inches between cookies.
Bake for 10 minutes, then check for crinkles.
If needed, bake 2–4 more minutes until puffy, wrinkled, and dark on the edges.
Enjoy once the cookies are cool and flattened!
